cranberry oatmeal muffins

Cranberry Oatmeal Muffins

 Original recipe called for fresh or frozen cranberries, but I tried it with dried cranberries and it was excellent. Adapted from Light Muffins by Beatrice Ojakangas.

 

Ingredients

 

  • 3/4 cup white flour
  • 3/4 cup whole wheat flour
  • 1 cup oatmeal
  • 1/2 cup brown sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup dried cranberries
  • 1 cup soymilk
  • 3 tblsp melted unsalted butter
  • 1 egg.

 

 Mix dry ingredients together then the wet, then mix together. Cook in preheated 400 degree oven for 20-25 minutes. Make 12 muffins.
