pad thai
When I eat out at a new thai restaurant, the first thing I try is the pad thai. I have never had pad thai anywhere that tasted like the pad thai at another place. The same goes for when I cook it. I'm adapting this recipe from Rose Elliot's Vegetarian Supercook.
Ingredients
- rice noodls
- tofu cut into cubes
- sesame oil
- onion
- garlic
- tamarind paste
- soy sauce
- brown sugar
- bean sprouts
- 2 eggs
- peanuts, chopped
- fresh cilantro
- lime wedges
Cook the noodles according to package directions. Fry the tofu in a wok until browned on the edges. Transfer to a plate. Sautee the onion and the garlic, when tender, add the tofu and the soy, tamarind, and sugar. Add the noodles. Cook for a couple minutes then add the eggs, making a well in the center of the wok and scrambling the eggs until they are hard. Mix it all together. Add the peanuts and garnish with cilantro and lime.
