scrambled tofu
I ate a lot of this when I was vegan. It's especially good with a side of salsa or picante sauce. And veggie breakfast sausage. And biscuits. And grits. It's also a good dish to use as an answer answer when your meat-eater friends ask you what you had for breakfast.
Ingredients
- 1 package extra-firm tofu, pressed
- 1 tablespoon oil
- 1 tablespoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon turmeric
- salt and pepper to taste
Press the tofu so that most of the water is expressed. I do it between my hands or I put it between two plates and put some cans of beans on top. Heat your heavy skillet andd the oil and the tofu. Break up the tofu into small chunks with your spatula or wooden spoon. Add the spices. Cook until the tofu starts to brown slightly.
